TWD: Cafe Volcano Cookies


This week Macduff of The Lonely Sidecar- choose Cafe Volcano Cookies, from page 153 of the Book.

What on earth is a "Volcano Cookie"? In its simplest form, this is an espresso meringue cooked with toasted nuts and sugar folded in. I am not a meringue lover.  No clue as to what how these were supposed to look.  The recipe seemed too simple to mess  up! (Thanks, Macduff!)

This crunchy cookie was shiny and dry out of the oven.  I substituted toasted hazelnuts for the almonds. The best part about it was the "snap, fizzle, pop" in your mouth.  I think my favorite part about these cookies was the whole unknown factor on how they would look, taste, smell etc.  Am not going to lie--I didn't love these cookies... but I was pleasantly surprised by them . The easiness factor in making them, also makes them look even better.  Grateful for MacDuff for selecting these, as I probably not have made these otherwise.  Cheers!

  7. Your cookies look great! I am baking these again today. This time subbing cocoa powder for espresso and subbing hazelnuts and pecans for the almonds and walnuts.

  11. I didn't love them at first, but I did find that they were strangely addictive. I'd eat one and then I'd have another one. I love the photos -- they seem to capture the essence of these cookies!

  12. You're right, the fun part of these was seeing how they would turn out, since we had NO idea and it seemed like a strange bunch of ingredients to do what it did. There are a million other goodies I'd rather have, yet, since there are here, I keep eating them! Sigh.

  14. Your cookies look perfect! This is exactly what I pictured when I read Dorie's description but mine didn't come out right at all :) They were certainly interesting, though, weren't they?

  18. Meringue cookies are not my fave either, but they are a nice change occasionally. I have a silpat and it's still unwrapped in the box. I keep forgettiing to use it. Thanks for visiting my blog.
